Beef and Onion Stew

This meal is amazing! It's a prime example of how a few simple ingredients cooked well can blend into a party in your mouth. Serve with couscous, rice, noodles or bread so none of the sauce goes to waste.
Ingredients

  • 1 1/2 lbs stewing beef
  • Flour
  • 1/4 cup butter
  • 3 medium yellow onions
  • 1 garlic clove
  • 1 1/2 cups beef broth
  • 2 tablespoons vinegar
  • 1 heaping tablespoon tomato paste
  • 2-3 bay leaves
  • 1 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 3/4 teaspoon dried thyme
  • Cooked couscous
Instructions
1. Dice the onions and finely chop the garlic.

2. Sprinkle some salt and pepper on the meat. Mix thoroughly with flour so that the meat is well coated.
3. Melt butter in a large pot/wok over medium heat, stirring constantly.
4. Raise heat to medium-high and place the meat in your pot.
5. Brown meat on all sides.

6. Stir in onions and garlic. Cook for 8-10 minutes, stirring constantly and scrapping the bottom of the pan so the flavour doesn't burn.

7.Stir in the broth, vinegar, tomato paste, salt, pepper, thyme and bay leaves.

8. Cover and simmer on low heat for 2 hours. Stir occasionally.

9. Serve over cooked couscous.
